The NuVal Scores for pasta – which range from 91 to 11 – show you that so-called “carbs” can be your friends nutritionally if you know which ones to choose. Whole grain pastas made from a few simple ingredients are rich in fiber and nutrients and have just about no harmful nutritional baggage. Even their glycemic load is low. Lower scoring pastas are made from refined rather than whole grains, or have added ingredients that drive up calories, cholesterol, and salt content.
